Honey Cookies for Christmas

18 Dec

With the girls all tucked away for winter, visions of sugarplums dance in my head. And these sugarplums will be made with honey. Do you have any favorite holiday honey recipes?

Almond & Honey-Butter Cookies

Beautiful thumbprint cookies that highlight the perfect marriage of almonds and honey. Definitely a “save the honeybee” cookie as almonds are utterly dependent on pollination by honeybees.

Sesame Honey Cookies

Nutty like halva but soft like a cookie, these anchor a cookie plate on the savory end of sweet.

These all look delicious! My favorite dessert with honey is a variation of baklava – this is an old family recipe from my Lebanese great-grandmother.

    Nut Rings (Ish-al bul-bul)

    0.5 pound pastry sheets
    1 pound walnuts
    0.25 cup sugar
    0.5 teaspoon cinnamon
    0.5 teaspoon cloves
    1 pound Rendered Butter

Combine walnuts, sugar, apices. Brush one pastry sheet with butter and sprinkle lightly with nut mixture. Cut pastry sheets in quarters (approx 6 inches long) and roll like cigars. Arrange in baking pan tightly, cut side down. Repeat until all pastry sheets are used. Bake @ 350 for 30 minutes. Brush each roll generously with butter; dip in syrup.

    Syrup

    3 cups sugar
    3 cups water
    0.5 pound honey
    juice from 0.5 lemon

Boil sugar and water together. Add honey and lemon juice. When pastry is cool, dip quickly in warm syrup.

    Makes about 40 Nut Rings.

Barelas Babe, these sounds amazing. Do you think I could use phyllo dough for the “pastry sheets”?

Some days I just wish Scotty could “beam me some treats”. These look so yummy I just want some.

Also, I made Bobbi’s chocolate honey truffles this weekend and they’re sublime. Definitely worth making.

Baklava is my reigning favorite holiday sweet made with honey. Next year, I’m going to try the almond and honey butter cookie recipe you posted. It sounds delicious!
