These all look delicious! My favorite dessert with honey is a variation of baklava – this is an old family recipe from my Lebanese great-grandmother.
Nut Rings (Ish-al bul-bul)
0.5 pound pastry sheets
1 pound walnuts
0.25 cup sugar
0.5 teaspoon cinnamon
0.5 teaspoon cloves
1 pound Rendered Butter
Combine walnuts, sugar, apices. Brush one pastry sheet with butter and sprinkle lightly with nut mixture. Cut pastry sheets in quarters (approx 6 inches long) and roll like cigars. Arrange in baking pan tightly, cut side down. Repeat until all pastry sheets are used. Bake @ 350 for 30 minutes. Brush each roll generously with butter; dip in syrup.
Syrup
3 cups sugar
3 cups water
0.5 pound honey
juice from 0.5 lemon
Boil sugar and water together. Add honey and lemon juice. When pastry is cool, dip quickly in warm syrup.
Makes about 40 Nut Rings.
